Some corn tortilla, spicy beef, beans, onions, red pepper and never enough cheese. Toasted for a bit, sprinkled some garlic sauce and sriracha, profit.

    Getting strong late night kebab vibes off this, in a good way. How you eating it without saucing up your entire hand? Knife and forking or daintily-crab-clawing it from the sides?

      Yeah, it got kinda messy. My kids were smarter than me so they added sauces as they went :)

    In our house one of our common lazy dinner options is something that we simply refer to as gen-mex. It is a combination of a bunch of ingredients commonly associated with Mexican food assembled in whatever way you want. I think most commonly it resembles burritos or nachos, but it can certainly be modified to look like just about anything.

    What I see here I would certainly classify as gen-mex.
